Grown in Pennsylvania.
Your snack was grown on a third-generation Pennsylvania mushroom farm that has been cultivating mushrooms since the early 1900s. We grow organic oyster mushroom mycelium there, then harvest the fibrous sheets whole.
MyChips runs on the MyBacon supply chain: the same whole mycelium sheets, from the same farm, sliced for the fryer instead of the skillet.
This farm is growing the first new mushroom crop in more than 400 years: whole slabs of Pleurotus ostreatus. It is the same gourmet oyster species sold at farmers markets, grown with Pennsylvania’s commercial mushroom-farm infrastructure.

Mycelium, explained
Whole slices of mycelium fry up crispy.
Oyster mushroom mycelium grows into dense, fibrous sheets on wood chips and other crop byproducts. Those whole sheets carry the fiber and protein. We harvest them, fry them in avocado oil, and season them.

MyForest Foods was spun out of Ecovative, the company Eben Bayer and Gavin McIntyre founded to explore the uses of mycelium technology.
Eben, a recovering pig and maple syrup farmer, has been cooking up MyChips in the R&D lab since the spring. We are making them available this fall because we enjoyed them so much in the office, and we think you will too.
